I’m not sure if this ever happens to you, but when dinner time comes around, sometimes I have no idea what to make. Last week I talked about meal planning, which I totally intend to do, but until I get that implemented I still spend about 10 minutes in the kitchen trying to figure out what to make. Mostly because my kids are hungry and I forgot to pull out meat. The result of this mulling around the kitchen resulted in a pretty delicious meal. I call it a bean and cheese taco bake.
Bean and Cheese Taco Bake
2 cans of refried beans
1 cup of frozen corn niblets
2 cups of grated cheese
crushed tortilla chips
In an 9×9 oven safe baking pan, spread the beans on the bottom of the pan. Evenly layer the corn on top of the beans and then top with 1 cup of cheese. Next, crush some of your favorite tortilla chips and put it on top of the cheese. Finally, sprinkle some more cheese on top of the tortilla chips. Place in a 400 degree oven for about 10 minutes, or until the cheese is melted.
Serve up the taco bake and top with salsa and sour cream. It’s just like nachos!
