This is an absolutely delicious recipe. I love making this for my family, and they love eating it. It’s also really easy to make, which is a bonus! I have to thank my mother in law, as she was the one who introduced me to the perogie casserole. I have made it my own since she made it, but I would have never thought about about making a perogie casserole without her.
1 bag of frozen perogies. I like the cheddar ones.
2 tbsp butter
1 tbsp brown sugar
1 can of cream of mushroom soup
3 cups of grated cheese
optional: package of bacon
Heat a frying pan to medium heat. Mince the onion and put the butter into the hot pan. Once the butter is melted, add the onion and the brown sugar. Stir together and cook the onions until they are soft.
While the onions are cooking, boil a pot of water and add the perogies once the water begins to boil. Cook the perogies until they are floating and then drain them.
In a separate bowl, add the onions, the can of mushroom soup and 1 cup of cheese. This is when you would add the package of bacon (fried, and chopped into pieces). Mix together.
Put the perogies into a casserole dish and then pour the mushroom soup mix on top.
Lay the remainder of cheese on top of the perogies and sauce and then put into the oven at 400 degrees F. until the cheese is bubbling and starting to brown.
Pull out the perogies and serve. I like to add a dollop of sour cream on top, but it isn’t necessary. Enjoy!
